History About Kicking Horse Coffee

At the Beginnings

It was once when two young entrepreneurs became restless. They wanted more wonder and fewer excursions. And they thought it was time to settle down and do something. Something big.

They chose a product for which they had a passion coffee. They chose the Canadian Rockies near Invermere BC as the place where they would live, work and play.

In 1996, they started hard working. They roast small quantities of good beans in their garage and sell the freshest and tastiest coffee they can have.

Although the garage has grown and there are many more beans, it is basically the same business since then.

Today

Kicking Horse Coffee is still found in Invermere, BC, beneath the towering peaks of the Canadian Rockies. Almost 120 people now work for us. The Kicking Horse Cafe is on-site and is a destination for lovers of Kicking Horse coffee. And every day is just another chance to wake up and make Kick-Ass coffee!

How to Brew Coffee Using the French Press Method

Overview

  • Boil clean water. Grind the beans and add them to the French press.
  • Rest boiling water at least 30 seconds.
  • Fill the French press with the right amount of water.
  • Add ground coffee and stir well.
  • Let it steep for 4-5 minutes.
  • Plunge slowly and serve it.

French Press Tips

Water

A cup of coffee is 98.5% of water. If drinking tap water is good, it is best to make coffee. Use cold and freshwater from a tap. First, run the tap for a few seconds before taking water. If the tap water is not very good, use natural spring water for the best results.

Grinding

Grind the fresh beans just before brewing. For the French Press use coarse grind coffee which must be between 0.75 mm and 1 mm. If grinding is too coarse, it will weaken the taste of the coffee. If the grinding is very fine, the coffee will be bitter or very strong.  We recommend using the best burr coffee grinder for a more consistent result.

Measurements

For a better cup of coffee, use 50 grams of ground coffee per liter of water. That means two tablespoons of coffee per cup of water.

Storage

Coffee can absorb odors and deteriorates when it comes into contact with air. Store the coffee in its Kicking Horse Coffee bag or sealed in its Kicking Horse Coffee until you are ready to grind more beans. Don’t refrigerate it; keep it in a cool and dry place.

How to Brew Coffee Using the Drip Machine Method

Overview

  • Use normal clean water to the drip machine.
  • You need two tablespoons of ground coffee per cup of water. If you like strong coffee, use more.
  • If you prefer whole beans, grind them with a grinder using medium-fine grind settings.
  • We recommend following the instructions of the coffee machine to prepare the best cup of coffee and enjoy it!

How to Brew Coffee Using the Pour Over Method

Overview

  • Heat the water.
  • Let the water rest for about 30 seconds after boiling.
  • Place the filter in your pour over coffee maker.
  • To rinse the filter and warm the brewer, moisten the filter with hot water.
  • Drain the water without closing the filter on the wall of the coffee machine.
  • Grind your coffee and put it in the filter. Line up the coffee and create a small fountain in the middle.
  • Slowly pour some water about 100 ml over the coffee to saturate them and wait 30 seconds for the coffee grinds to bloom.
  • To ensure constant contamination of the grinds, slowly pour the remaining water on the ground coffee in approximately 100 ml increments. This will provide stable extraction. Be careful not to spill water on the outside of the filter. Pour until the water is empty.
  • Let the drip cycle end and remove the filter.
  • Give your brewing machine a good vortex to mix coffee evenly.
  • Pour in a cup for yourself and enjoy it!
  • Finally, wash and clean your Pour Over with a mild soap solution and hot water, then let it dry.

  • Start your espresso machine and heat for at least 20 minutes using a portafilter installed at the group head.
  • Run water through the group head and port filter to wash and clean the machine.
  • Then wipe the portfolio with a dry cloth.

  • Grind 18-21 g of coffee bean directly into the filter. It should be fine grinding.

  • Using the tamper, tamp the grinds with 30lbs of pressure distributed evenly across the coffee. Give the tamper gently ¼ turn to polish the grinds.
  • Lock the portafilter with the grouphead.
  • Then place an espresso cup under the portfolio.
  • Start the extraction process to drip and turn into a gentle stream flow
  • In 20 seconds 2-ounce shots should be extracted
